Perfect Crispy Potatoes

The Perfect Crispy Potatoes roasted in the oven only requires a few extra steps. Add these to your breakfast/brunch rotation or incorporate them as a side for an entree. Boiling the potatoes briefly in water before roasting creates the perfect exterior crunch with a soft interior.
Ingredients
Serves: 2-3 Time: 60-70 minutes
Perfect Crispy Potatoes
- 4-5 medium Yukon potatoes
- 2 Tbs salt
- 1/2 tsp baking soda
- Oil + seasoning (for roasting)
Directions
- Chop the potatoes into 3/4 inch chunks. Preheat the oven to 450ºF.
- Place the potatoes in a large pot of water with enough room to cover the potatoes by about an inch.
- Add the salt and baking soda. Bring to a boil. Once boiling, allow the potatoes to become tender and easy to prick with a fork, about 10 minutes.
- Drain the potatoes and allow them to sit for at least 30 seconds to let some moisture escape.
- Toss the potatoes in light oil and seasoning (of your choosing), coat evenly. Spread out on a large baking sheet, place in the oven and bake for 20 minutes without turning or rotating. After the initial 20 minutes, use a spatula to flip the potatoes, roast for 30-40 more minutes until crispy on the outside.
- Remove from the oven once baked, serve, and enjoy.
