Jammy Zucchini Dip

Jammy Zucchini Dip with a non-dairy yogurt sauce. This delicious dip can be whipped up in minutes and makes for an excellent side and can be served with bread or crackers, or to accompany a main dish.
Ingredients
Jammy Zucchini Dip
- 3 medium zucchini, cut lengthwise into quarters, about 3/4-inch chunks
- 3 Tbs olive oil
- 1 tsp salt
- 6 garlic cloves, thinly sliced
Yogurt Sauce
- 1-2 Tbs chili oil
- 3/4 cup unsweetened non-dairy coconut yogurt
- 1 tbs fresh lemon juice
- 1/2 tsp dried mint (optional)
- Pinch of salt and black pepper
- 2 garlic cloves, minced
Directions
- In a mixing bowl, combine the yogurt in a bowl with the lemon juice, mint, salt, pepper, and garlic. Spread out onto a serving dish and top with the chili oil.
- a large skillet, set heat to medium-high. Once hot, add olive oil, then add the zucchini, stirring to coat evenly in the oil. Season with salt. Allow it to sit without stirring for about 4 minutes until browning. Toss and add the garlic, continue stirring occasionally for another 3-4 minutes, until the zucchini has broken down.
- Top the yogurt sauce with the zucchini.
- Serve immediately with bread or crackers, or as a side dish. Best enjoyed fresh.
