Chocolate Mint Cookies

These make for the perfect gift basket of holiday treats for your loved ones, friends, and neighbors. Plus, this recipe is vegan and gluten-free friendly with a few simple substitutions.

Ingredients

Chocolate Mint Cookies

  • 1/2 cup butter or vegan butter
  • 1/4 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 cup packed brown sugar
  • 2/3 cup unsweetened cocoa powder
  • 1 cup flour (or gluten-free flour)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbs milk (or non-dairy milk)
  • 1/4 cup chocolate chips
  • 1-3 small peppermint candy canes (crushed)

Directions

  1. Begin by preheating the oven to 350ยบF
  2. Next, in a large mixing bowl, combine the butter, sugars, non-dairy milk, and vanilla. Whisk together or blend with a hand blender until smooth. Then mix in cocoa powder until combined.
  3. Then, in a separate bowl, whisk together flour, salt, and baking soda. Once whisked, gradually add the flour mix to the wet ingredients.
  4. Fold in the flour with a rubber spatula until well combined.
  5. Afterward, fold in the chocolate chips and half of the crushed peppermint candy.
  6. On a baking sheet, roll out the dough into small balls and place about 2 inches apart. This batch should yield about a dozen small palm-sized cookies.
  7. After the dough has been rolled out, sprinkle the rest of the peppermint candy on the top of the cookies. Place in the oven and bake for 10 minutes for soft and chewy cookies or 12 minutes for more firm cookies.

Vegan Gingerbread Cookies

Ingredients

Gingerbread Cookies

  • 3 & 1/4ย cupsย all-purpose flour (or gluten-free flour)
  • 2ย tspย baking powder
  • 1ย Tbsย ground ginger
  • 1/2ย tspย ground clove
  • 1ย Tbsย cinnamon
  • 1/2ย tspย ground nutmeg
  • 1/4ย tspย salt
  • 3/4ย cupย vegan butter,ย room temperature
  • 1/2ย cupย brown sugar, packed
  • 3/4ย cup dark or lightย molasses
  • 1ย tspย vanilla extract
  • Powdered sugar (for topping)

Directions

  1. To begin, in a large mixing bowl combine the flour, baking powder, ginger, cinnamon, cloves, nutmeg, and salt. Set it aside.
  2. In a separate large mixing bowl, using a whisk or hand mixer, beat the butter and brown sugar together until smooth and creamy, for about 1 minute. Add the molasses and vanilla, and beat the mixture again until creamy.
  3. Then, gradually add the flour mixture to the butter mixture. Fully combine the flour into the butter before adding more flour. With a rubber spatula, scrape down the sides of the bowl as needed. When all the flour has been added, the dough should be fully formed.
  4. With the dough, divide it into two halves and roll each into a ball. Wrap each ball in plastic wrap. Place in the fridge and chill for at least 3 hours and up to 2 days.
  5. Once the dough has chilled, preheat the oven to 350ยฐF and line at least 2 baking sheets with parchment paper.
  6. Roll out the dough onto a lightly floured surface. When using a rolling pin, the dough should be about 1/8 inch thick.
  7. Cut the dough using cookie cutters (of your preferred shape) and then transfer the cookies onto the baking sheets, leaving a 1/2 inch of space between cookies.
  8. Reroll any excess dough and repeat until all the dough has been used.
  9. Place the trays in the oven and bake for 8 to 10 minutes. Once baked, transfer the baking sheets to cooling racks.
  10. Once the cookies have cooled, use a mesh strainer or sifter to sprinkle powdered sugar on top of the cookies.
