Chocolate Mint Cookies

  • 1/2 cup butter or vegan butter
  • 1/4 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 cup packed brown sugar
  • 2/3 cup unsweetened cocoa powder
  • 1 cup flour (or gluten-free flour)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbs milk (or non-dairy milk)
  • 1/4 cup chocolate chips
  • 1-3 small peppermint candy canes (crushed)

Directions

  1. Begin by preheating the oven to 350ºF
  2. Next, in a large mixing bowl, combine the butter, sugars, non-dairy milk, and vanilla. Whisk together or blend with a hand blender until smooth. Then mix in cocoa powder until combined.
  3. Then, in a separate bowl, whisk together flour, salt, and baking soda. Once whisked, gradually add the flour mix to the wet ingredients.
  4. Fold in the flour with a rubber spatula until well combined.
  5. Afterward, fold in the chocolate chips and half of the crushed peppermint candy.
  6. On a baking sheet, roll out the dough into small balls and place about 2 inches apart. This batch should yield about a dozen small palm-sized cookies.
  7. After the dough has been rolled out, sprinkle the rest of the peppermint candy on the top of the cookies. Place in the oven and bake for 10 minutes for soft and chewy cookies or 12 minutes for more firm cookies.
