Balsamic Roasted Brussel Sprouts
1 lb. fresh brussel sprouts, halved
4 garlic cloves, peeled, chopped
10 oz. petite cherry tomatoes
1 tbsp. Olive oil
2 tbsp. Balsamic vinegar
1 tsp salt
1 tsp black pepper
- Preheat the oven to 400 degrees F. Prepare vegetables and place them in a tall baking pan.
- Season with oil, vinegar, salt, and pepper. Place pan in the oven and bake for 15-20 minutes, rotating halfway through and checking for readiness.
- Prick cherry tomatoes with a fork to release the juices and stir in the pan. Brussel sprouts should be crisp on the outside and tender.
- Remove from the oven and enjoy as a side dish
