Mint Chocolate Fudge

Mint Chocolate Fudge that is fully vegan and purely delicious! This recipe is like a thin mint cookie only creamier and richer. This recipe is also perfect if you wanted to give a tasty treat as a gift any time of the year.

Ingredients

Mint Chocolate Fudge

  • 1/4 coconut cream or other creamy non-dairy milk (unsweetened)
  • 1/2 cup creamy cashew butter
  • 1/4 cup sugar or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp mint extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 + 2 Tbs cup vegan butter or coconut oil, melted
  • 1/8 tsp salt
  • Fresh mint leaves for garnish

Directions

  1. Pull all your ingredients out ahead of time to ensure they are at room temperature.
  2. Then, line a 9×5 inch loaf pan with parchment paper, enough to have over the sides to easily remove the fudge later.
  3. Next, combine the coconut cream, cashew butter, sugar, vanilla, and mint in a medium bowl. Mix together until thoroughly combined.
  4. Stir in the cocoa powder and salt and mix together until it is free of lumps.
  5. Then add in the melted butter or coconut oil and stir until fully combined.
  6. Pour the fudge into the pan and top with the freshly chopped mint leaves for garnish.
  7. Freeze the fudge for at least 4 hours or overnight. Once done, slice the fudge into squares and store it in the freezer in a reusable container or cover the tray with foil. Do not leave the fudge out long otherwise, it will soften.

Ingredients

Sourdough Coffee Cake

  • 1/2 cup unsalted butter or vegan butter
  • 1/2 cup brown sugar
  • 1 cup unsweetened applesauce
  • 1 cup unfed sourdough starter
  • 2 cup flour (all-purpose)
  • 1/2 tsp vanilla extract
  • 1 tsp baking soda & baking powder
  • 1 tsp salt
  • 1/4 cup dairy or non-dairy milk

Coffee Cake Crumb Topping

  • 2 cup flour
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 cup unsalted butter or vegan butter

Directions

  1. Preheat the oven to 350ºF
  2. In a large mixing bowl, cream together the butter, vanilla, applesauce and brown sugar.
  3. Once thoroughly mixed, mix in the sourdough starter and lightly mix until combined.
  4. Then, add in the salt, baking powder, and baking soda and combine well.
  5. Gradully mix in the flour until fully combined and then add in the milk or non-dairy milk. The dough should be fairly sticky.
  6. Then, lightly grease an 8 x 8 inch square pan.
  7. In another mixing bowl, combine the crumb topping ingredients until crumbly.
  8. Transfer the batter to the pan and top evenly with the crumb topping.
  9. Place the coffee cake in the oven and bake at 350º for 45-50 minutes. Prick with a knife to make sure the cake is done.
  10. Allow the cake to cool before serving.

Almond Flour Peanut Butter Cookies

  • 1 cup peanut butter (creamy or crunchy)
  • 2 Tbs maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup brown sugar
  • 2 Tbs nondairy or dairy milk

Directions

  1. Then, in a large bowl, combine the peanut butter, maple syrup, salt, baking soda, vanilla extract, non-dairy or dairy milk, and brown sugar. Use a whisk until thoroughly combined.
  2. Using a spatula, fold in the almond flour until a dough ball is formed. The dough should be firm enough to roll into a ball, not too sticky.
  3. Chill the dough in the refrigerator for at least 20 minutes.
  4. Then, preheat the oven to 350ºF when you’re ready to bake.
  5. Form small, even-sized dough balls by hand and flatten them onto a cookie sheet, creating a cross in the center with a fork.
  6. Place the cookies in the oven and bake for 10-12 minutes. Allow them to cool before serving.
  7. Store at room temperature for up to 3-4 days.
