Peanut Butter Brownies

  • 1/3 cup non-dairy butter
  • 1/2 cup vegan chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup non-dairy milk (we recommend oat milk)
  • 1 cup all-purpose flour (or substitute gluten-free flour)
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/2 tsp vanilla
  • 1 Tbs maple syrup or agave nectar

Directions

  1. Begin by preheating the oven to 350ºF and preparing a 8 x 8-inch baking pan with a non-stick cooking spray or oil.
  2. In a large mixing bowl, combine the chocolate chips, butter, and cocoa powder and microwave for 30 seconds.

3. Once melted, whisk together until smooth.

4. Add in the sugar, vanilla, salt, and baking powder. Whisk together.

5. Then, add the non-dairy milk and whisk until smooth.

6. Gradually add in the flour and combine well, ensuring that the batter is smooth and free of lumps.

7. Transfer the batter to the baking pan using. rubber spatula. Make sure the batter is evenly spread out.

8. Either using the same bowl or another bowl, combine the peanut butter, 1/2 tsp vanilla, and maple syrup or agave nectar. Whisk together.

9. Add dollops of the peanut butter mix on top of the brownie batter and use a knife to create a swirl on the top layer of the batter.

10. Bake in the oven for 30-40 minutes or until a toothpick comes out clean

11. Allow the brownies to cool completely before cooling.
