An Easy Guide to Stir Fry

Protein

Choose up to 1 pound for your meal’s protein

Black Bean & Garlic Stir Fry

Gluten-Free Garlic/Ginger Teriyaki SauceSweet & Sour
2 Tbs tamari
1/2 cup vegetable stock or water
2 Tbs corn starch
1 Tbs agave or brown sugar
1 tsp sesame seeds
2 tsp rice vinegar
1 Tbs garlic and ginger, minced
1 cup stock or water
3 Tbs brown sugar
1/4 cup soy sauce
1 Tbs honey
1 clove garlic, minced
1/2 tsp ground ginger
2 Tbs cornstarch
1/4 cup cold water
1 Tbs soy sauce or tamari
1 Tbs rice vinegar
2 Tbs tomato sauce or ketchup
1 Tbs brown sugar or agave
1/3 cup water or stock
2 Tbs cornstarch

Preparation

To get a headstart, you can save time by preparing your vegetables and proteins ahead of time and storing them in airtight containers in the fridge the day before cooking. You can also prepare your sauce and seal them in airtight containers stored in the fridge.

However, save your aromatics for cooking time.

And finally, if you’re serving your stir-fry with rice, you can use leftover rice or cook your rice the day before and store in the fridge. Plus, leftover rice makes for the best fried rice!

Cooking

After you’ve prepared your protein, sauce, and vegetables – being sure to chop, marinade, and mix ahead of time. For cooking, we recommend using sesame oil, but vegetable or olive oil will also work just fine!

  1. To start, in a wok or large skillet, heat 2 Tbs of your selected oil on medium-high heat. Begin cooking your protein. Sauté until they are thoroughly cooked through and lightly golden (take temperature if you’re using meat).
  2. Set aside your protein once cooked.
  3. Wipe your skillet with a paper towel and reapply oil as needed.
  4. On medium-high heat, cook your aromatics for 1-2 minutes until their scent is released. Then begin sautéing your vegetables.
  5. Cook vegetables for about 10 minutes or until tender.
  6. Next, push the vegetables to the side of the pan, creating an empty center.
  7. After, pour in your selected stir-fry sauce and allow it to sit until it darkens, bubbles, and thickens. Combine into your vegetables.
  8. Then, add your protein back to the pan and stir well into the sauce.
  9. Remove from heat once everything is tender.

Optional toppings

To conclude, we recommend sliced jalapeños, chopped dry roasted peanuts, lime juice, or minced cilantro, or Thai basil to top your stir-fry with. You can also use fresh sesame seeds or sriracha.

Serve with rice, rice noodles, or even with ramen.

Ingredients

Zucchini Bread

  • 1 heaping cup grated zucchini
  • 1/4 oat milk (or other non-dairy milk)
  • 1/2 cup of unsweetened applesauce (or 1 flax egg)
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/4 cup vegetable or olive oil
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 cup all-purpose (or gluten-free) flour
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • Optional add-in’s: chia seeds, walnuts

Directions

  1. Preheat the oven to 350ºF
  2. Grate the zucchini with a hand grater or food processor. Squeeze out excess liquid from the zucchini using a cheesecloth.
  3. In a large mixing bowl, whisk together the sugar, vanilla, oat milk, applesauce, and oil.
  4. In a separate bowl, sift together the flour, spices, salt, baking powder, and baking soda.
  5. Combine the dry ingredients into the wet ingredients well, omitting any lumps in the batter.
  6. Fold in the grated zucchini until well incorporated.
  7. If you are adding in chia seeds or chopped walnuts, fold those in as well.
  8. In a lightly oiled loaf pan, add the batter to the pan.
  9. Place in the oven and bake for 45-50 minutes. You may want to start the baking process by covering the pan for the first 15-20 minutes to prevent the outside from overbaking.
  10. Check the zucchini bread by pricking with a toothpick or butter knife in the middle. If it comes out clean, your bread is done!
  11. Serve and enjoy.
Zucchini Bread

Store uneaten bread by wrapping it in plastic wrap and leaving it at room temperature for up to 3 days. It can also be frozen for up to two months. Allow it to thaw by resting it in the refrigerator and enjoy it within 3 days.

Ingredients

Carrot Parsnip Soup

  • 3-4 large carrots
  • 1 lb. bag of parsnips
  • 1/2 medium yellow onion, diced
  • 3-4 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp ground ginger or 1/2 Tbs fresh grated ginger
  • Olive Oil
  • 1 can low fat coconut milk
  • 2-4 cups vegetable broth
Roasted Carrots & Parsnips

Directions

  1. Begin by preheating the oven to 400ºF.
  2. Next, remove the tops from the carrots and parsnips, and cut them in half longways, and cut the larger round parts in half a second time.
  3. Place the carrots and parsnips on a baking sheet.
  4. Drizzle a dash of olive oil over the carrots and parsnips and lightly rub in.
  5. Place the baking sheet in the oven and roast the vegetables for 25-35 minutes or until they have crisped slightly and softened.
  6. Meanwhile, prepare the onion and garlic.
  7. Once done, add to a medium-large stockpot and sauté on medium/high heat.
  8. Add a splash of vegetable broth or water to prevent it from sticking. Sauté for 10-12 minutes.
  9. Then reduce heat to low and add two cups of vegetable broth to the pot, cover with a lid and allow it to simmer.
  10. After the carrots and parsnips have roasted, remove them from the oven and place them in the stockpot.
  11. Using an immersion blender (or if not available, transfer to a food processor), blend the ingredients until they are mostly smooth.
  12. Add in the coconut milk and continue to blend.
  13. Depending on how thick or thin you want your soup, you can add a touch more vegetable broth, blending until you have the soup texture of your desire.
  14. Taste and adjust seasoning with more salt, pepper, or ginger as desired.
  15. Serve with bread, crackers, or a side salad and enjoy.
