Apple Pancakes

Apple Pancakes that are fully vegan, easy to make, and great to enjoy any time of year! These cakes can be made non-vegan by substituting for dairy butter and milk, and the flax egg for one egg. This can also be made using gluten-free 1:1 flour.

Ingredients

Apple Pancakes

  • 2 Tbs non-dairy butter
  • 1 1/2 cup all-purpose flour
  • 2 Tbs brown sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 Tbs ground flax meal + 3 Tbs warm water, combined
  • 1 cup non-dairy milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 medium red or green apple, peeled and grated (about 1 heaping cup)
  • Oil or cooking spray for cooking
  • Maple syrup and chopped apples sautéed in butter, cinnamon and brown sugar, for serving (optional)

Directions

  1. Whisk together the flour, brown sugar, baking power, and cinnamon in a large bowl.
  2. In a separate bowl, whisk together the milk, melted butter, flax egg, vanilla extract, grated apples, and salt. Combine the wet ingredients into the dry and mix until a semi-thick batter is formed.
  3. Heat a large nonstick or cast-iron skillet over medium heat. Lightly coat with cooking oil. Add about 1/4 cup portions of batter to the pan, cooking 2-4 minutes, until bubbles appear and then flip cooking for another 2-4 minutes depending on the size of your pan. Reduce the heat to medium-low if the cakes begin to cook too quickly.
  4. Transfer to a plate or a tray in 250°F oven to keep them warm. Repeat until the remaining batter has been used, wiping and re-oiling the pan.
  5. Serve and enjoy!
