Potato & Lentil Soup

Stay warm and healthy during the Winter season with this potato & lentil soup. This recipe is also packed with vegetables to really pump up the nutrition. This recipe serves 4-6 people and leftovers can be stored in the refrigerator for up to 5 days

Serves: 2-3 Prep time: 10 minutes Cook time: 15 minutes Ingredients 2 packs instant ramen 1/2 yellow onion, diced 1/2 red bell pepper, sliced 1 c. bok choy, chopped 1/2 c. broccoli, chopped 2 garlic cloves, minced 1 carrot, thinly sliced 1 quart vegetable stock

Roasted Curry Cauliflower & Grain Bowl

Ingredients

3 c cauliflower, chopped 

1 Tbsp olive oil

1 tsp curry powder

½ tsp turmeric powder

½ tsp garlic powder 

1 Tbsp apple cider vinegar 

1 tsp salt & black pepper 

1 c. uncooked quinoa 

1 c. chopped kale 

½ cucumber, diced 

¼ c red onion, diced

2 tsp tahini or other desired dressing

Directions

  1. Preheat the oven to 350 degrees F. In a large bowl, combine cauliflower, olive oil, curry, turmeric, garlic, salt, and pepper, mix thoroughly. Spread out cauliflower mix on a baking sheet and bake in the oven for ~35 minutes or until cauliflower begins to crispen.
  2. Prepare quinoa in a rice cooker or on a stovetop pan with 2 c. water. 
  3. Prepare remaining vegetables and set aside. 
  4. Once quinoa and cauliflower are ready, serve your grain bowl with a portion of quinoa, kale, red onion, and cucumber, and cauliflower and top with tahini, or a squeeze of lemon juice and sesame seeds.

Black Bean Tortilla Soup

Black Bean Tortilla Soup

Ingredients

2 Tbsp olive oil

½  yellow onion, diced

3 cloves garlic, minced

1/2 red pepper, diced

1 1/2 tsp cumin

1 tsp chili powder

1 1/2 cups spicy salsa

4 cups vegetable stock

1 Tbsp brown sugar or maple syrup (to taste)

2 15-ounce black beans, drained

1 15.25-ounce whole kernel corn, drained

For Serving: optional

Lime juice

Fresh cilantro, minced

Red onion, diced

Tortilla chips

Ripe avocado

Hot sauce

Directions

  1. Heat a large pot over medium heat. Once hot, add oil, garlic, onion, pepper, and a pinch each salt and pepper and stir. Cook for 4-5 minutes, stirring frequently until onions are translucent and the peppers have a bit of color.
  2. Add cumin and chili powder and stir to coat. Then add salsa, vegetable stock, and sugar. Stir to combine, then increase heat to medium heat and bring to a low boil.
  3. Once it’s boiling, add black beans and corn and stir. Reduce heat to low and simmer, covered, for 30 minutes or more, stirring occasionally. The longer it simmers, the more the flavor will develop. It’s even better the next day.
  4. Serve as is or with recommended serving options above.
  5. Leftovers will keep covered in the refrigerator for 5-6 days or in the freezer for 1 month.

3-4 avocados

1 lime, juiced

1/4 c. white onion, diced

1 roma tomato, diced

1 tsp. ground cumin

1 tsp. salt

1/2 tsp. black pepper

1/2 tsp. ground coriander

1/4 c. cilantro, minced

Directions

  1. Halve the avocados, remove pits, and use a fork to mash the avocados into a large bowl.
  2. Prepare remaining vegetables and add to the avocados.
  3. Add lime juice, seasonings, and cilantro.
  4. Mix thoroughly, taste, and adjust seasonings as desired.
  5. Cover the bowl and refrigerate for 5-10 minutes and serve with chips or a dish.
