If you’d prefer, you can choose to leave off the icing and substitute the ingredients for organic or more natural sweeteners such as agave or honey. For gluten allergies or sensitivity, the flour can be substituted for gluten-free flour.
Ingredients
Lemon Blueberry Scones
2 cups all-purpose flour
1 egg replacer or 1 Tbs flax meal mixed with 2 Tbs warm water
In a large mixing bowl, combine the flour, salt, vanilla, and sugar. Whisk together.
Create a hole in the middle of the flour mix and pour in the egg replacer, lemon zest, and lemon juice.
On top of that, add in the 8 Tbs of cold vegan butter.
Using your hands or a pastry blender, mix the wet ingredients into the dry. The dough should be semi-firm but easily shapeable and not too sticky. If the dough is very dry, add a splash of oat milk or other non-dairy milk as needed. Fold in the blueberries by hand.
Once well combined, turn the dough out onto a lightly floured surface and form it together into a log about 1 1/2 – 2 inches in height.
Use a pastry cutter or knife to cut out triangles along the length of the dough log.
Add the shaped scones to a baking sheet.
Place in the oven and bake for 10 minutes, rotating, and baking for 10-12 more minutes or until the scones are lightly golden.
If using icing, mix together those ingredients to achieve an icing that is not too liquidy. Pour over the scones after they have cooled.

Ingredients
Cucumber Gazpacho
2 cucumbers, end removed & seeded
1/2 avocado
2 Tbs red onion, diced
1/2 lemon, juiced
2 Tbs basil leaves
1 Tbs parsley leaves
5 mint leaves
1 Tbs olive oil
2 Tbs unsweetened coconut or soy yogurt
1 small garlic clove, peeled
1 tsp apple cider vinegar or white balsamic vinegar
Pinch of salt and black pepper (to taste)
Water as needed
Directions
Begin by cutting the cucumber in half to remove the seeds. Dice the cucumber and add it to a blender, food processor or pot (if using an immersion blender)
Cut the avocado in half and scoop out one half, removing the pit.
Prepare your onion and garlic.
Whether you are using a blender, food processor, or immersion blender, add the avocado, onion, garlic, herbs, yogurt, vinegar, and olive oil to the same vessel as the cucumber.
Blend the ingredients together until smooth. If the soup is too thick, add a splash of water to achieve your desired thickness and texture.
Taste the soup and adjust the flavor with salt and pepper.
Once smooth and to your personal tastes, transfer the cucumber gazpacho to an airtight container and chill in the refrigerator for at least 4 hours.
Serve with fresh slices of cucumber and a sprig of herbs and enjoy!

If using tofu, begin heating about a tablespoon of sesame oil in a pan and stir fry the cubed tofu until lightly crisp on the outside. Once cooked, remove from the pan onto a plate with a paper towel and set aside.
Add the seasoning, soy sauce, and rice vinegar to the vegetables. Once the onions are translucent and the vegetables have softened, reduce heat to low and add in your protein.
When the broth is reaching a boil, add in the ramen and cook for 5-7 minutes or until the noodles are soft.
At this point, your noodles and vegetables are done. Turn off the heat. If you’re preparing any add ons like a poached egg or minced cilantro, get that ready.
Evenly distribute the broth, noodles, and stir-fry between two bowls. Serve and enjoy!
