Vegan Greek Yogurt Dressing

This Vegan Greek Yogurt Dressing is absolutely perfect for salads & wraps or use as a dip for a mediterranean platter of pita and vegetables. If you have an aversion to soy, we recommend substituting for a different non-dairy yogurt (whether oat or almond based) and making it sure it is plain and has no added sugar. Fresh mint is also recommended to get the best flavor out of this dressing.

Ingredients

Vegan Greek Yogurt Dressing

  • 6-8 oz. plain, unsweetened soy yogurt
  • 1 lemon, zested
  • 1 Tbs lemon juice
  • 1/2 tsp garlic powder
  • 1 Tbs fresh mint, minced
  • Salt, to taste
  • Black pepper, to taste

Directions

  1. Rinse, dry, and mince your mint leaves. Be sure to not use any stems.
  2. Zest your lemon and set the zest aside.
  3. Cut the lemon and juice it into a small bowl, being sure to remove any seeds. Measure out one tablespoon.
  4. In a small mixing bowl, combine the lemon zest and juice with the yogurt.
  5. Add in the mint and garlic powder.
  6. Mix well and taste.
  7. Gradually add pinches of salt and pepper, tasting and adjusting the dressing to your preference.
  8. Serve with a salad or on a wrap and enjoy!

Leftover dressing may be stored in an airtight container for 1-2 days.

Ingredients

Shaved Brussels Sprouts Salad

  • 1 pound brussels sprouts, shaved & stems discarded
  • 1/2 cup broccoli florets, shaved
  • 1/4 cup roasted sunflower seeds
  • 1/2 lemon, juiced
  • 2-3 Tbs ground tahini
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 2 tsp apple cider vinegar
  • Top with chopped scallions

Directions

  1. Rinse and dry your vegetables
  2. Add the shaved Brussels sprouts, broccoli, and sunflower seeds to a large salad bowl.
  3. In a small bowl, mix together the olive oil, tahini, lemon juice, salt, pepper, and apple cider vinegar.
  4. Add the dressing to the salad.
  5. Top with chopped scallions, serve & enjoy!

Creamy Coconut Ramen

Transform those instant ramen packs into Creamy Coconut Ramen! This ramen uses coconut milk to make for a deliciously creamy broth. Just pick your favorite protein, stir fry some vegetables and enjoy! If you don’t want to use tofu, substitute for a poached egg or shrimp.

Ingredients

Serves: 2 Time: 30-45 minutes

Creamy Coconut Ramen

  • 2 packs instant ramen (discard flavor packs)
  • 2 cups vegetable broth
  • 1 can lite coconut milk
  • 1 Tbs Low sodium soy sauce plus extra to taste
  • Rice vinegar, 2-3 tsp
  • Sesame oil, 1 Tbs
  • 1/2 lime, juiced
  • 1/2 yellow onion, thinly sliced
  • 1 small bell pepper, thinly sliced
  • 1/2 small squash, thinly sliced
  • 1 large carrot, thinly sliced
  • broccoli small florets, chopped
  • 1/2 cup mushrooms, thinly sliced
  • 1 pack of extra-firm tofu, pressed and cubed*
  • 1/2 tsp Garlic powder
  • 1 tsp Black pepper
  • 1/2 tsp ground ginger
  • 1/4 tsp Cumin
  • Optional toppings: sriracha, chopped cilantro, chopped scallions

Directions

  1. Begin by preparing your protein and vegetables and set them aside. If using tofu, allow time for the tofu to be pressed and dried.
  2. If using tofu, begin heating about a tablespoon of sesame oil in a pan and stir fry the cubed tofu until lightly crisp on the outside. Once cooked, remove from the pan onto a plate with a paper towel and set aside.
  3. Then, begin sautéing the vegetables in sesame oil. Cook until they are slightly tender.
  4. While your vegetables begin sautéing, in a pot heat 2 cups of water, lime juice, and coconut milk. Remove the ramen from their packs.
  5. Add the seasoning, soy sauce, and rice vinegar to the vegetables. Once the onions are translucent and the vegetables have softened, reduce heat to low and add in your protein.
  6. When the broth is reaching a boil, add in the ramen and cook for 5-7 minutes or until the noodles are soft.
  7. At this point, your noodles and vegetables are done. Turn off the heat. If you’re preparing any add ons like a poached egg or minced cilantro, get that ready.
  8. Evenly distribute the broth, noodles, and stir-fry between two bowls. Serve and enjoy!
