Almond Crescent Cookies

Almond Crescent Cookies

Almond Crescent Cookies are delicious, melt in your mouth little biscuits that are delightful on a cold winter morning with a hot cup of coffee or tea. You can even freeze the leftovers if you want to save some! These are also called Mandelsichel, a traditional German recipe.

What’s great about this recipe is that it can be easily modified for vegan and gluten-free diets by substituting the butter for a vegan option and the flour for gluten-free baking flour.

Ingredients

Almond Crescent Cookies

  • 2 cups flour, sifted
  • 1/2 teaspoon salt
  • 1 cup butter or vegan butter
  • 6 Tbs confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 cup almonds (or pecans or walnuts), finely chopped or ground
  • Extra confectioner’s sugar for topping

Directions

  1. Begin by preheating the oven to 350ºF
  2. Next, sift your flour in a separate mixing bowl. Set aside.
  3. Afterward, add your butter to a mixing bowl and cream it with a hand or stand mixer until light and fluffy. Then add the confectioner’s sugar, vanilla, and salt. Cream until well combined.
  4. With a rubber spatula, gradually combine the sifted flour into the butter mixture. The dough should be firm.
  5. Once all the flour is combined, fold in the chopped almonds (or another nut of your choosing).
  6. By hand, roll out the dough into 2-inch cylinders and place them onto a baking sheet. Use your hands to shape the dough into crescent shapes.
  7. After rolling out all the dough, place in the oven and bake at 350ºF for 10-15 minutes, until lightly golden.
  8. Place the cookies on a cooling rack. Once cool, use a sifter or strainer to dust the confectioner’s sugar on top of the cookies.
  9. Serve with coffee or tea and enjoy!
