Leftovers Breakfast Tacos

Let’s say you made some delicious roasted, grilled, or braised vegetables for dinner or maybe you had a taco night. Either way, any leftovers from dishes such as these would make for amazing breakfast tacos so long as you’ve got some eggs around! And if you happen to have cilantro, cheese, or salsa around then that’s a plus!

For this recipe, we used leftover roasted sweet potatoes and chickpeas. But be sure to check out more Hearty recipes and pick your favorite!

Ingredients

Serves: ~2 Time: 10-12 minutes

Leftovers Breakfast Tacos

  • 1-3 eggs, scrambled
  • 2-3 tortillas, corn or flour
  • 1 1/2 cup leftover roasted vegetables
  • Optional toppings: salsa, cheese, minced cilantro, lime juice

Directions

  1. Crack your eggs into a bowl and beat them well with a fork or whisk until they are slightly frothy.
  2. In the microwave, heat up your leftovers for about 1-1.5 minutes depending on the wattage of your microwave. Set aside the vegetables.
  3. In a small, non-stick pan, set heat to medium/medium-low and add a touch of oil or butter. Once hot/melted, pour in your eggs and stir frequently to scramble until they are soft and fluffy. Eggs should be thickened and no visible liquid egg remains.
  4. Warm-up your tortillas in the microwave for 10-15 seconds.
  5. Prepare your tortillas with reheated leftovers and eggs, top with optional toppings, serve and enjoy!
