Black Bean Vegetable Soup

Black Bean Vegetable Soup

Black Bean Vegetable Soup could be served up any time of year! This dish is packed with plant-based protein, vitamins, and nutrients. Optionally, serve this soup over rice or with crispy tortillas and top with lime juice, avocado slices, and minced cilantro.

Optionally, you can soak your own black beans (instead of buying them in a can), in which we recommend using a whole pound for your soup.

Ingredients

Black Bean Vegetable Soup

  • 2 (15 oz) cans of black beans, drained and rinsed
  • 4 cups vegetable broth (or 4 cups water & 2 bouillon blocks)
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 large carrot, diced
  • 4 garlic cloves, minced
  • 1 large bell pepper, diced
  • Black pepper, to taste
  • 2 Tbs Olive oil
  • 1 tsp ground cumin
  • 2 bay leaves
  • 1 tsp ground thyme
  • 1/2 tsp dried oregano
  • Salt, to taste
  • Optional toppings: rice, tortilla chips, avocado, cilantro, lime juice

Directions

  1. If you are soaking black beans, prepare that the night before. Otherwise, begin by chopping all of your vegetables.
  2. In a large pot, heat on medium heat and add 2 Tbs olive oil. Add the garlic and onion and cook for 2-3 minutes. Then, add the remaining vegetables. Sauté until they brown (or even crisp lightly for a smokey flavor).
  3. You may add a splash of apple cider or white vinegar to prevent the vegetables from sticking to the pot.
  4. Once the vegetables are thoroughly cooked, add your rinsed black beans and vegetable broth.
  5. Keep the heat on high and bring the mixture to a boil. While this is happening, add your seasonings and bay leaves.
  6. After the soup has reached a boil, reduce heat to low and cover the pot. Allow it to simmer for 15-20 minutes.
  7. Then, turn off the heat and taste your soup. Add more seasonings as desired.
  8. Serve with optional toppings or as is and enjoy!

Kale White Bean Soup

Kale & white bean soup is one of the easiest soups to make when you’re in a hurry and want something filling. Plus, this recipe can be very simple on ingredients or if you’re feeling like you need to kick things up this dish can be served with pasta or bread.

Ingredients

Kale White Bean Soup

  • 1/2 yellow onion, diced
  • 3 small carrots, diced
  • 2-3 garlic cloves, minced
  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • Black pepper to taste
  • Olive oil
  • Optional seasonings: red cayenne pepper, ground thyme, oregano, and Italian seasoning

Directions

  1. Begin by preparing your vegetables and set aside. Leave the kale for near the end.
  2. In a medium-large soup pot, set heat to medium-high and drizzle a bit of olive oil. Add the carrots, onion, and garlic, and sauté for 5 minutes.
  3. Next, add the beans and vegetable broth. Stir in a dash of black pepper. Add more seasoning toward the end to taste. In this video, we add dashes of cayenne, oregano, Italian seasoning, and ground thyme (it’s very delicious this way). Cook at the same med-high heat for 5-10 minutes.
  4. Reduce heat to low, add the kale, and cover the pot. Let the mix simmer for 20 minutes.
  5. After 20 minutes your soup is ready. Turn off the heat and serve hot as it is or over pasta or with bread. Substitute gluten-free options if desired for a full gluten-free dish.

Kimchi Stew

Kimchi Stew

Kimchi, originating from Korea, is delicious, spicy fermented napa cabbage and sometimes radish. When fermented, the dish is mixed with salt, vinegar, garlic, chili peppers, and other spices and is tightly sealed in a jar. This stew recipe is sure to become your new favorite winter dish to warm up with.

Typically served with rice, noodles, or soup, kimchi is a flavorful addition to a meal. Not to mention, kimchi has a wide array of health benefits!

Through the fermentation process, kimchi produces healthy bacteria called “lactobacilli” which aids digestion. Fermentation also produces probiotics which can help your body fight infections.

Kimchi is also low in calories – plus the garlic and chili peppers can contribute to a boost in your metabolism rates and decreasing inflammation.

Ingredients

Serves: 4-6 Prep Time: 15 minutes Cook Time: 40-45 minutes

Kimchi Stew

  • 1 block extra-firm tofu, pressed and cubed
  • Sesame Oil
  • 1/2 white onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 small bell pepper, thinly sliced
  • 2 small carrots, thinly sliced
  • 1 small zucchini, thinly sliced
  • 2 cups kimchi, chopped (save any excess liquid)
  • 1 cup mushrooms, sliced
  • Soy sauce (to taste)
  • Rice Vinegar
  • 1 Tbs Curry Paste
  • 4 Cups Vegetable Broth
  • 1 Cup Uncooked Rice & 2 Cups Water
  • Green onions, chopped

Directions

Preparing stew ingredients

  1. First, prepare the tofu by removing it from the package, draining the liquid, wrapping the block in a paper towel, placing it on a plate, and pressing it with a skillet or heavy pot. Allow the liquid to drain for at least 10 minutes.
  2. While the tofu is pressing, begin cooking your rice either in a rice cooker or stovetop pot.
  3. Next, prepare all of your vegetables and kimchi. Set aside the vegetables.
  4. Discard excess liquid from the tofu, unwrap it from the paper towels and cut the tofu into cubes.

Cooking the kimchi stew

  1. In a medium skillet, heat 1 Tbs sesame oil on medium-high heat. Once hot, add the tofu to the pan. Cook for 2 minutes and add the excess liquid from the kimchi. Continue to stir and cook the tofu, flipping occasionally until the outside is lightly crisp.
  2. Once the tofu is cooking, move it to a plate and set it aside for later. Then, using the same pan, heat a little extra sesame oil and begin sautéing onions and garlic for 2-3 minutes.
  3. Then, add the carrots, bell pepper, and zucchini. Stir together. Add a splash of rice vinegar to keep the vegetables from drying out. Cook together for 5-7 minutes.
  4. Transfer the vegetables to a large pot, then add the kimchi, mushrooms, curry paste, and vegetable broth. Optionally add szechuan pepper or black pepper for an added kick. Adjust taste with dashes of soy sauce if desired.
  5. Bring the liquid to a boil, then reduce heat to low, cover the pot and simmer for 10-15 minutes or until the vegetables are tender and soft.
  6. When the vegetables are done, turn off the heat and add the tofu to the stew. Serve over rice, top with green onions (maybe some extra sriracha if it isn’t spicy enough), and enjoy!
