Butternut Squash & Potato Soup

A hearty roasted butternut squash soup with Yukon potatoes, sweet potatoes, onion, carrot, and celery. This dish is easy to prepare and makes a ton of soup! Perfect for a potluck or meal prep in the colder months. Butternut squash is rich in vitamin A, dietary fiber, and potassium, and they are a low-glycemic food. All which support your immune system, digestion, and blood pressure. This soup is paired with a simple oven-roasted broccoli and kale lightly tossed in oil with salt and pepper.

Butternut Squash & Potato Soup
- 1 large butternut squash, peeled and halved
- 1 large sweet potato
- 3-4 small-medium Yukon potatoes
- 1 Tbs olive oil
- 1/2 yellow onion, diced
- 1 large onion, diced
- 2-3 celery stalks, diced
- 3 garlic cloves
- 1 tsp paprika
- 1 Tbs curry powder
- 1/2 tsp ground cumin
- 1 tsp turmeric, ground
- 1 tsp black pepper
- 4-5 cups vegetable broth, as needed for desired thickness
- Optional toppings: Sriracha, sliced almonds, roasted broccoli or kale
Directions
- Preheat the oven to 400ºF.
- Prepare your butternut squash by peeling the skin, cutting half, lightly covering with oil and laying out on a roasting pan or tray. Place in the oven and roast for 25-30 minutes or until lightly roasted and softened. Meanwhile, prepare your other ingredients.
- In a large stovetop pot, set heat to medium-high and add the onion and garlic. Cook together for 3 minutes, then add the potatoes, carrot, and celery. Stir for another 5-7 minutes. Add in the seasonings, stir for 2 minutes. Then add 3 cups of broth, or enough just to cover the vegetables. Bring to a simmer until the butternut squash is roasted. Once roasted, add the squash to the pot and simmer in the broth for about 10 minutes.
- Then, add the remainder of the vegetable broth and transfer the soup to a food processor or use an immersion blender to blend the soup.
- Once blended, you may add more broth for a less thick soup. Taste and adjust seasoning as desired.
- Serve and enjoy!
