Ingredients

Mediterranean Chickpea Salad

  • 1 can chickpeas, drained & rinsed
  • 1/2 red onion, diced
  • 1 small red bell pepper, diced
  • 1 large cucumber, peeled and quarter diced
  • 2 Tbs parsley, minced
  • 3-4 small radishes, diced
  • Vegan Greek Yogurt Dressing for serving

Directions

  1. Prepare your vegetables, including rinsing, drying, and chopping.
  2. Drain and rinse your chickpeas.
  3. Add all the ingredients to a bowl and allow it to chill in the refrigerator for 30 minutes to an hour or serve as is.
  4. Pair with a greek yogurt or tahini dressing, serve, and enjoy!

Homemade Tahini Dressing

This Homemade Tahini Dressing is perfect for salads, wraps, or dishes like our Root Vegetable Tahini Grain Bowl! This recipe is super easy to make with just a few ingredients and you can store any dressing you don’t use in an airtight container or jar in the refrigerator for up to 4 days. You should be able to find everything you need for this tahini dressing at your local grocery store.

Tahini is ground sesame seeds which are high in potassium, calcium, iron, and magnesium. See below for additional nutrition information.

Ingredients

Homemade Tahini Dressing

  • 1/3 cup ground tahini
  • 3 Tbs lemon juice
  • 1 garlic clove, minced (optional)
  • Salt and pepper to taste
  • 4-6 Tbs water (to thin the dressing)

Directions

  1. In a small mixing bowl, combine your ground tahini and lemon juice until well mixed.
  2. Gradually add in water until the dressing reaches your desired thinness.
  3. Add in pinches of salt and pepper. Taste and adjust to your liking.
  4. Store remainder of the dressing in an airtight jar or container and store in the refrigerator for up to 4 days.

Serve this dressing on a mediterranean salad, wrap, or use as a dip!

This Perfect Vegan Cornbread is a wonderful alternative for those with dairy allergies or other dietary aversions. If needed, you can substitute the sugar for unsweetened applesauce.

Ingredients

Perfect Vegan Cornbread

  •  1 1/4 cup all-purpose flour
  •  1 cup yellow cornmeal
  •  1/3 cup granulated sugar
  • 1 mix egg replacer
  •  1 tsp salt
  •  1/2 Tbs baking powder
  •  1 1/4 cup oat milk
  •  1/3 cup softened smart balance “butter” or canola oil

Directions

  1. Begin by preheating the oven to 350ºF and lightly greasing a 8 x 8 inch or 9 inch round pan with a drizzle of olive oil or smart balance.
  2. In a large mixing bowl or stand mixer, whisk or beat together the sugar, butter or oil, salt, egg replacer, and baking powder.
  3. Gradually add in the cornmeal, mixing it well and preventing lumps.
  4. Then add in the oat milk. The cornmeal will seem to over-absorb the oat milk but continue to mix well.
  5. Gradually mix in the flour.
  6. The ingredients should be mixed together well, creating a smoothy, semi-thick batter.
  7. Transfer the batter to the baking pan.
  8. Place in the oven and bake for 20-30 minutes, checking at the 20-minute mark by pricking with a toothpick.
  9. When the toothpick comes out clean, remove the cornbread from the oven.
  10. Allow cornbread to cool, cut, serve, and enjoy!

Serve this cornbread up with our One-Pot Vegan Chili
